I found a recipe on the Food Network site - one of my favorite go-to places. The ratings were great and I learnt a lot from several of the reviewers who left tips after trying it themselves - including adding a Streusel Topping (that was from Emeril's). It baked up nicely, was moist and not too sweet or tart. It's definitely a party sized cake and would make great muffins too! My daughter didn't care much for the blueberries but, enjoyed the "cake" part. She asked if maybe we could put some thing else in their place...that's my girl, I thought. ;-) Maybe we'll try it with chocolate!

The cake was realllllly good, thanks for sharing it with us.Wish I could eat the whole big slice of it like before :(. Give me few months and I will ask you to make it again, would bring the blueberries and eat the leftover once too so you wont have to worry about them :-)
ReplyDeleteThanks Shalini! Ya, few months will be good. We're all blue-buried out at the moment! ;) Lol!
ReplyDeleteHmmm, I've got blackberries at home, what would you suggest?
ReplyDeleteHey Karla,
ReplyDeleteSorry, just seeing this. Have to figure out how to get comment notifications!! :)
As for blackberries though, I haven't used them before. That said, if you're still looking for something to do with them, I think you could make a Blackberry Cobbler. :)
Have you made one before? It's the one with the fruit on the bottom and the yummy oatmeal topping on top. :) Granted at my house that would mean that the top would all be gone and you'd still be stuck with the fruit (plus sugar!) on the bottom. ;)
Of course you could also try the Blueberry recipe and substitute blackberries instead?
Let me know if you try something. Am slowly getting into using fruits in baking. Haven't explored that too much past Apple pies... :)
Yum! Loved it!! Way better than the ones I have had before. Thanks for sharing it. Relished every single bite :-)
